This granola is crunchy, lightly sweetened, and also super easy to make! It can be enjoyed on top of yogurt, with fruit, or alone as a snack. Put it in an airtight container and leave it out on the counter for breakfasts and snacking.
Start by mixing the oats, brown sugar, coconut, and nuts in a large bowl.
I use pecans when I make this because they are my favorite and I always have some at home, but almonds or walnuts would also work great in this granola!
In a separate bowl, mix the oil, maple syrup, and salt. Make sure you use real maple syrup! The artificial type will burn in the oven.
Combine this mixture with the dry ingredients.
Once the granola is fully mixed, pour out onto two baking sheets. Make sure you spread it out into a thin layer and then bake at 250 degrees for one hour and fifteen minutes. Stir every 15 minutes to ensure the granola is evenly browned.
Allow the granola to cool, and then mix in the raisins. Store in an airtight container.
I enjoy this granola with yogurt and fruit or even just by itself!

- 3 cups oats
- 1 cup pecans
- 3/4 cup shredded sweet coconut
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup vegetable oil
- 1/2 tsp salt
- 1 cup golden raisins
- In a large bowl, combine the oats, brown sugar, coconut, and nuts.
- In a separate bowl, mix together the oil, maple syrup, and salt.
- Add the wet ingredients to the dry ingredients and mix well.
- Pour the granola mixture onto two baking sheets and spread into a thin layer.
- Bake at 250 degrees for one hour and fifteen minutes, stirring every 15 minutes.
- Allow the granola to cool, and then mix in the raisons.
