This creamy, cheesy spinach-artichoke dip is perfect as an appetizer or a snack. Enjoy with tortilla chips, crackers, or crusty bread.
Cook the frozen spinach and artichokes according to the directions on the package. If you have a can of artichokes, you can always use that — since the cans are a little larger, it’ll just be a little more “artichokey” — which would not be a bad thing!
After they are cooked, you may want to chop the artichokes into smaller pieces to make dipping easier.
In a large bowl, mix all of the ingredients except the mozzarella cheese.
Spoon the mixture into a casserole dish and spread evenly.
Top with mozzarella cheese.
For my dish I used about 2/3 cup cheese, but depending on how much surface area there is, you may want to use more or less. Just make sure it is topped evenly.
Bake at 350ºF for 25 minutes. I prefer when the cheese is golden-brown, so I turn on the broiler for a few minutes at the end.
Serve with chips, crackers, or crusty bread. Enjoy!
