Sweet Potato Burgers
These sweet potato burgers bring together some great flavors and textures. Topped with a spicy aioli and cooling mixture of avocado and lime, this burger will become one of your favorites!

Sweet Potato Burgers

white cannellini beans
drained and rinsed

medium sweet potato

onion

Instructions
Pierce the sweet potato with a fork a few times and then bake at 400 degrees for 45 minutes to an hour, or until tender.
Once the potato has cooled, peel and mash in a mixing bowl. Add the beans and continue to mash until well combined.
Add in the onion, lime juice, flour, greens, salt and chipotle. Mix well to combine.
Form four patties out of the mixture and press both sides into the breadcrumbs.
Heat vegetable oil in a large skillet. Cook the patties until browned on both sides. Remove and place on a paper towel to remove excess oil.
Place a burger on each bun and top with onions, tomatoes, avocado, and spicy aioli mixture.
